Chocolate Zucchini Cake Recipe

Sift the following dry ingredients:

3 cups flour

1 Tbsp. baking powder

1/4 tsp. salt

1 cup unsweetened cocoa powder


Use an electric mixer to first mix wet ingredients:

1 cup of butter or margarine, softened

3 cups  sugar

1 1/2 tsp vanilla extract

3 eggs

1 3/4 cups milk


Fold in:

2 cups shredded zucchini to the butter mixture

Combine wet ingredients with dry ingredients. Pour into a greased and floured 9 x 13 pan (my mom says "a 10-inch tube pan" but who has one of those kicking around?). Bake at 350 degrees for 1 1/4 hours.
